Recipe: Enchilasagne

While scouring the internet for random ideas for dinner I came across this site via one of my craft blogs. I loved the ideas of the Chicken & Rice Enchilada Casserole, or Enchilasagne as someone on their comments called it. I  didn’t follow the recipe to the letter, mostly as I forgot to put the beans in and didn’t feel like doing the spicy rice. So this is how I did it.

Ingredients.

Chicken Breast Chunks (Cut into slivers)
Old El Paso Enchilada  Box Set
- Soft Corn Tortillas
- Enchilada Mix
- Tomato Sauce
Cheese
Rice

I browned the chicken breast in a pan with the enchilada mix and a little water while the rice cooked. Then I layered everything like a lasagna. Starting with some rice, cheese and tomato sauce. Then the tortillas followed by the chicken, cheese and tomato sauce. Repeat until the dish is full and top with cheese.

Place in the oven at 200Cel for 15-20 mins or until cheese is bubbling.

I think what I would do differently is add a little aromat to the cheese layers and more tomato sauce than what comes with the Old El Paso pack, as it was a little dry. Maybe using refried beans as well.

I made so much it lasted for dinner Tues night, plus Lunch for me Wed and dinner for my DH Wed night as I went out. So this could easily feed say a family of four for just under a tenner.

Recipe – Cheesy Chicken Pasta

Ingredients

  • Pack of Chicken breast cubes
  • 1x Cups of Water
  • 2x Cups of uncooked pasta of your choice (I used macaroni)
  • Mixed Veg (I used one of the frozen steam packets I have)
  • Tin of chopped tomatoes with garlic (or plain if you prefer)
  • Grated Cheese (I used a mix of cheddar and mozzarella)

What to do

Heat the pan, keep the heat medium all the way though.

Add a little cooking oil to a hot pan and brown off the chicken.

Add the cup of water and bring to the boil. Add more water if you think you need it.

Add the pasta to the boiling pan. Stir until the pasta is tender.

 

Add the tomatoes and veg, and keep stirring until the juices reduce then add two handfuls of grated cheese and bind it together.

I’m gonna mix in some aromat next time I try this, I think it will work really well.

Recipe – Cheating Easy Pizza

This is a really easy and quick thing to do and quite filling.

Ingredients

Naan Bread (any flavour you want, I used plain here but I want to use garlic next time)
Cherry Tomatos
Tomato Puree
Cheese of your choice (Mozzarella is best, but I used a chedder mozzarella mix)
Meat of your choice (I used some pepperoni, but you can use other meats, or veg if you want a vege pizza)


 

 

 

 

What to do

Set your oven to 200C.
While it’s warming set out your naan on a baking tray or oven pan. If it is flat to the tray then brush the backs with a little olive oil to stop it from sticking.

With a flat knife spread the puree over the base naan.

 

 

 

 

 

 

 

Carfully arrange half tomatos and meat on the pizza then cover in cheese. Any left over meats you can put on top if you want.

 

 

 

 

 

Place in the oven for around 10 mins, or until the cheese has melted lovely like you see in the top pic.

I’m gonna try it with a garlic naan next and thinner meat as the pepperoni was a little thick.
