Roasted fish and egg peppers

So I found out you could roast eggs. I think the only thing different I would do with this is get bigger peppers.

I used green because I can only have green veg at the moment, but I think it would be nicer with red peppers.

Steam your fish as normal (cod in my case) and hole out the peppers, rinsing out any seeds as they are nasty. While doing this pre heat your oven to 200 degrees C.

When your fish is ready, layer it into the bottom then crack an egg so it sits on the top.

Place them into the oven for about 15-20 mins or until the egg looks ready.

Sprinkle with salt (truffle sea salt in my case) or pepper or whatever you’re allowed. and eat :D

Very yummy. The eggs take on a smokey nutty taste. Nice and different on this repetitive diet.

Faux Pho

It’s not exactly Pho. It has no noodles or meat. But it does have fish. That’s why it’s Faux (or fake) Pho. It’s a make do Pho using the ingredients I have.

Note: Please forgive the lyrics to Dick in a Box during this recipe.. I started writing the “steps” and it got in my head.

Step 1. (Cut a hole in a box)
Put your fish (cod in this case) on to steam. Usually takes about 20 mins from frozen.

Step 2. (Put your junk in that box)
Put on some consomme (chicken in this case, use what you like) on to boil. When it’s boiling poach an egg in it.

Step 3. (Make her open the box)
Pull out the egg after a few mins of poaching, pop it in your bowl then add some vegetables (in this case a bit of leak, a cabbage leaf cut up and a couple of sugar snap peas cut up) into the consomme to blanch. By this point your fish will be ready so add that too the bowl and then pour on the veg and consomme.

And that’s the way you do it

Very yummy. Could do with some chillie oil but I don’t think I would be allowed it.

 

 

10 Days to go

So I got my date for my assesment, it will be on the 3rd of April, so a week today, at 10am. I get to meet Sheila, who I’ve been talking to, and good news, she confirmed I can have milk again!

So yesterday I cut down my eggs to only two, and felt much better than the day before. I had cinnamon fish for dinner which was rather nommy.

Today feeling ok, just not a patient person and know that time slows down when you’re anticipating something. I’m in a bit of a flighty mood, so might take the day off work.

Down to 306.2lbs from 308.2 so lost 2lbs yesterday.

Cinnamon Fish!

I placed the fish into the steamer bowl with a little water, some apple, cinnamon and a spiced apple tea bag. I put the veg on the steamer tray below and steamed for 30 mins.

The fish didn’t absorb as much of the cinnamon as I would think but the apple was nice.
